"My mother was born in Ecuador. My father was born in Puerto Rico. And out of all places, I am from New York. As a chef, I have always had the passion for brining my heritage into my cooking. Just as Ecuador is famous for their shrimp ceviche, Puerto Rico is famous for mofongo. And it is in my belief, without Hispanic culture, the world would suffer a huge loss for the tradition of cooking. Because it is what makes the world go round."
